We’ve never needed a reason to dive headfirst into a giant tub of ice cream – the weather is just a convenient excuse, so it shouldn’t come as a surprise that we’ve found a way to make our ice cream last even longer. How you may wonder? Well, we don’t just eat it anymore, we add it to our weekend tipple and pretend we are drinking harmless soda floats instead. Ice cream cocktails are a fairly simple and ingenious idea. In fact, you can make them at home easily, which is why we went to some experts and got you recipes to sweeten the deal.
Rohit Awate, Beverage Manager, Courtyard By Marriott Pune City Centre gives us a beginner’s guide – “Since the basic ingredient in ice cream is milk, it inherently goes well with fruits, coffee, and liqueurs like cointreau and Bailey’s Irish Cream . However, you cannot pair ice cream with citric fruits or any other acidic substance in a cocktail, since it would cause the milk components to curdle. The cream in the drink would then float on top and the liquids would settle below, resulting in a two-layer mess.”
Ideal pairings would be with aged Whisky like Bourbon, which will go well with chocolate ice cream and peanut butter – resulting in a combo rich in oil, fat and flavour. “On the other hand, neutral spirits like Vodka are realy versatile and go with anything, although it matches particularly well with chocolate chip and honey and fig ice cream.” Aged Rum, since the spirit has a sweet undertone, doesn’t pair well with fruit flavoured ice creams, but unaged Rum like white Rum does so excellently.
Salivating yet? Before we give you the recipe, let us also add that crisps, fruit chops, fruits jellies and crushes too can be used as garnish once the cocktail is ready. And now that you are all set, here are a few recipes for you to try at home.
Aguamiel De Fraise
Ingredients:
Tequila – 60 ml
Strawberries – 3 fresh
Half a scoop of vanilla ice cream
Chocolate sauce for lining of glass
Glass Type: Margarita
Method:
- Line the glass with chocolate sauce and freeze for about 5-10 minutes
- Add the ingredients in a blender and blend with ice, pour the blended mixture in the glass and garnish with chocolate dipped strawberries
Nutty Beams Scotch
Ingredients:
Jim Beam – 60 ml
Butterscotch ice cream – 1 scoop
Peanut butter – 1 tablespoon
Ice
Glass Type: Martini
Method:
- Blend all the ingredients together and pour it in the martini glass
- Garnish with chocolate sauce to create roundles

Chi Chi
Ingredients:
Vodka – 60ml
Blue curacao – 15 ml
Pineapple juice – 90 ml
Vanilla ice cream – 2 scoops
Coconut cream – 15 ml
Garnish – Pineapple slice
Glass type: Hurricane glass
Method:
- Put 60 ml Vodka along with 15 ml blue curacao, 90 ml pineapple juice, 2 scoops of vanilla ice-cream and 15 ml coconut cream in a shaker
- Shake it well and pour into a hurricane glass
- Garnish with a pineapple slice
Lava Flow
Ingredients:
Bacardi Rum – 60 ml
Vanilla ice cream – 2 scoops
Pineapple juice – 90 ml
Grenadine – 30 ml
Garnish – Pineapple slice
Glass type: Hurricane
Method:
- Put 60 ml Bacardi Rum along with 2 scoops of vanilla ice-cream and 90 ml pineapple juice in a blender
- Blend it for 30 seconds. Pour it into a hurricane glass
- Pour 30 ml grenadine on top of the drink
- Garnish with a pineapple slice
